Coffeecake Muffins:

¼ cup - firmly-packed brown sugar - 50ml
¼ cup – chopped walnuts – 50ml
1 tbsp – all-purpose flour – 15 ml
1 tbsp – “Blue Bonnet” margarine, softened – 15ml
1 tsp – cinnamon – 5ml
1 – egg – 1
1 ¼ cups – milk – 300ml
½ cup – “Blue Bonnet” margarine, melted – 125ml
2 ½ cups – all-purpose flour – 625ml
½ cup – granulated sugar – 125ml
3 ½ tsp – “Magic” baking powder – 17ml
1tsp – salt – 5ml


GREASE large muffin tins or line with paper baking cups.
COMBINE brown sugar, walnuts, 1 tbsp (15ml) flour,
1 tbsp. (15ml) margarine and cinnamon; set aside
BEAT egg in bowl with fork. Blend in milk and ½ cup (125ml) melted margarine.
COMBINE remaining ingredients in large bowl.
STIR liquid mixture into flour mixture, stirring just until moistened.
SPOON half of batter into muffin cups; sprinkle 1 tbsp. (15 ml) sugar mixture over each. Top
with remaining batter.
BAKE at 400°F (200°C) for about 20 minutes or until done.
COOL. Store in air-tight container.
MAKES 12 large muffins.
